remember that recipe book we all made????


the lovely sheila rich has emailed me a major change to her coconut mochi recipe!! it's in the back of the book- kindly write in the change please. and echo, liko, rachel....etc. remember when i was all sad about the mochi i tried to make for amby's 2nd birthday party???? this is why it didnt turn out!!! haha- apparently you need 2 cups of WATER for the recipe to work (as opposed to no water at all). what a relief.... i was SO CONFUSED as to what i did wrong. haha. ok, here it is:


Coconut Mochi (Pink kind)
4 c. mochiko
2 c. sugar
1/2 tsp. baking powder
2 c. water
1 can (12oz.) coconut milk
red food coloring

Combine dry ingredients. Combine liquids and add to dry ingredients. Mix until smooth. Mix in food coloring. Pour into lightly greased 9x11 pan. Cover with foil. Bake at 350 for 1 hr. Turn off oven and let sit another 15 minutes. Cool, cut into strips with plastic knife. Roll in cornstarch. Cut strips into pieces.

have you tried to make it again? if so, i might just happen to stop by your house tonight and see if you happen to still have some and if you happen to offer it i will of course have to say yes. hehe
this looks so yummy though. where do you buy mochiko?

hey! we are online at the same time :) i havent made it yet but am thinking about it... if i can muster up the courage to get off my big bum and fire up a hot oven.... :)

the mochiko flour is in the same aisle as regular flour i believe.... wait, wait a minute.... if not there then for some reason i am thinking the like, ethnic food aisle... like the one that has seaweed and strange, delicious sauces.... try those! it's pretty cheap if i remember correctly too!

OH MY GOSH, my stomach just dropped when I read this -- I am making this for the first time TONIGHT for dessert (actually I told Neil he should try making it today while I'm at work); we're having friends over for dinner. I will pass along this correction, it COULD NOT have come at a better time!!!!!!!!!!!!!! So weird, you read my mind. Thank you!!!!

No worries -- we actually brought mochiko with us from an Asian market in VA. Neil has wanted to make mochi ever since he had it in HI. Even so, we live walking distance to Chinatown which has helped in more than one pinch! We went there over my lunch hour today to get green curry paste for the main dish tonight and we also bought the cornstarch. Kinda weird figuring out exactly what I'm buying when the label is in only Chinese and Spanish. I'll let you know how it turns out!!
